Grilled Loin of Icelandic Lamb
Free-roaming Icelandic lamb and its importance in Icelandic farming and food culture. Grilled Loin of Icelandic Lamb served with erring mushrooms, mushroom puree, broccolini, and lamb demi-glace. Sides include smashed and pan-fried baby potatoes, smoked mayo, dill, chives, parsley, pickled shallots, and pickled yellow mustard-seeds.
